Are my injector o-rings going?

Truck runs GREAT on the highway - lots of power, good turbo boost (new turbo), 500-600 deg EGT at 65-70mph, great fuel mileage.

But, when I get off the highway hot, I can barely get the truck to creep through intersections - it stumbles and has no power until I get the rpms high (over 2k). I also had a hard time starting it hot on a recent trip. No codes, and I don't have a way to read fuel pressure while driving (but the fuel pump is not that old).

I am planning to change the IPR o-rings tomorrow due to the hard start when hot and since I have a set but the IPR only has 20k miles on it. Very little oil in the vally, but there is a little bit on the driveway when parked at a steep angle after a long drive (so something is leaking oil into the valley - although the source is not visible with a mirror and flashlight).

I dumped some fuel from the water separator drain and it was crystal clear (no oil) but a couple pieces of something pink/red and rubbery (o-ring?).

I have never touched my injector o-rings and have figured I am on borrowed time...thoughts before I tear into it deeper?

If it is the injector o-rings, am I better to replace just the o-rings or go with some stage-1's (I use it for infrequent towing and mostly a daily driver).
