08-10 6.4L Info needed

Unfortunately my beloved early 2000 7.3L will likely be totaled after we were involved in an accident last weekend. I'd already been eyeing the '08 - 10's after reading in my Diesel Power magazines and online about how much power there is to be had with the regular bolt-ons my '00 had (chip, exhaust, intake) and how nice they are to drive. We were towing our camper and the tow company elected to put my truck on a roll-back and the owner showed up in a '12 F-350 King Ranch dually to tow the camper (he was nice enough to let us ride with him to a truck stop & wait while we loaded our necessities into our friends truck). I know it's slightly different, but I fell even more in love with the King Ranch interior after riding in his. So ideally I'd like a King Ranch trim model (preferably the reddish brown b/c it reminds me of the 'Medium Ginger' paint on my Gpa's loaded '71 Ford F-250 with Explorer and Sport Customs packages that started my love affair with trucks many years ago).

Anyway, my question is what should I look for if I'm planning to get a used 6.4L and do some basic mods if they weren't done already? I read a lot of classified posts where people with 7.3L's were putting them back to stock, or selling off parts & stated "I'm looking for a '08", so are the 08's the most desirable for modding, just cheaper b/c they're older, or is it just a generic reference to '08-10 models? Also, I could use some education on the job 1,2,3 thing. I saw SmokeyWren's post about the timeline of Job 1,2 & 3, but what does that mean to a buyer, i.e. are there quality issues with them?
