Faulty temp sensors?

Would you rather believe data coming from ECT & EOT sensors or an infrared thermometer pointed at oil filter housing and thermostat housing? My ECT sensor data is at times very erratic while driving down the road. EOT sensor seems to be working normally. My ECT & EOT deltas can be 20*+ by the sensors but if I use my infrared thermometer it's only 3-7* deference. Which would you believe? After a cold soak over night (at least 12hrs), both sensors are within 2-3* of each other and slightly warmer than ambient.

Cooling system flushed and new OEM thermostat last year.
Sinister coolant filter, first filter ever used was completely clean after 5k miles.
