F350 SRW: Where did my missing payload go?

Spent the Sunday out looking at new trucks at my local Ford dealer. They about 25 superduty trucks on the lot but only 2 were F350 SRW trucks which is basically what I'm shopping for. One was a black platinum which I don't want and the other was a white Lariat which could be a possibility. I walked into the dealership with all the Ford payload stats at my fingertips. According to the Ford towing guide payload table a F350 4x4 crew cab with the 156.2" bed should have a payload of 3970 lbs. Here is the Ford payload chart

So I go to look at this specific F350 Lariat

Which seemed like a reasonable truck, perhaps fancier than I might want with the nav and sunroof but reasonable. Then I go to look at the door sticker to confirm the payload ratings and????? What happened to my missing 845 lbs? The door panel says 11,500 GVWR but the sticker below says max payload of 3125 lbs which is 845 lower than the Ford specs. I thought perhaps that might be the diesel and the payload ratings were for lighter stock gas engines but nope, I went back to the Ford build a truck web site and the same Lariat with diesel shows a 3970 payload in the running total on the side. So where am I missing 845 lbs? Could this be the due to the offroad package and the skid plates? Surely they can't weigh that much. The sunroof and extra electronics?

I'm not necessarily shopping for this specific truck but I am trying to understand how to spec one out to maximize payload for 5th wheel towing and it was a surprise to see such a low payload on an F350 when all the literature puts the payload on these things in the 4,000 lb range. If I order up a new 2015 F350 exactly like I want it I don't want to get some surprise on my payload numbers.

Yes I know....get an F450 if I want the big payload. But that won't fit in my garage and my wife refuses to spend the next 10 years dodging a truck parked in the driveway every time she wants to pull out. And I don't want something that big for daily use.
