EOT/ECT temp going crazy 180-290 insantly

Hello all!

I have a 2001 7.3 with a 6637 filter and edge juice on it. I Bought the truck a few months back after it was sitting for 2 years for a cheap cheap price.

Its been throwing a SEL since i bought it. Recently ive been after it hard. I had a edge evo cs hooked up to it for a short amount of time and had the eot pulled up. Normal SEL it would be up to temp on the highway around 65-70 at 170-180 degrees. The temp would start jumping around EVERYWHERE with the snap of a finger from 180 to 280 back to 190 than well you get the picture. it would do this for I'd say 20 seconds to a minute. It would also start to shudder or jump half way through this temp change(sometimes pretty aggresive) . It would all stop once I threw the SEL light and my temp would set at 213 and stay untill the SEL turned off. this is the same with the ECT also

I bought a new EOT only to find out nothing... Changed the thermostat nothing...

I recently had the injectors buzzed alls well beside the glorious 8 out of self test or w/e it is. the code I have is for EOT out of operating range. This is apparently the only code. I have a hard time believing it.

How is the EOT set up? is it a thermistor/fuse set up and sents a ohm reading that turnes to a degree? does it have a ground? I found the schematic for a 02 gy/rd is sensor signal return (reference/ground) Can i manually ground wire to check for a short the easy way?

Any tips would be greatly appreciated.
